Assyrtiko
Assyrtiko is a white grape variety most commonly used for still dry, but also for sweet wine production. It is believed to originally come from Santorini (Greece). It is a grape variety that buds and ripens late, with big bunches and berries. It is resistant to downy and powdery (oidium) mildews, and also drought tolerant. Assyrtiko typically produces monovarietal wines but is sometimes used in blends with different grape varieties. A classic blending partner is Chardonnay. Fermentation usually takes place in stainless steel tanks, maturation – in stainless steel tanks.
