Xarello
Xarello is a white grape variety used for sparkling and still dry wine production. It is believed to originally come from Penedes (Spain). It is a mid-budding and mid-ripening grape variety with medium-sized bunches and thick-skinned berries of medium size. It is susceptible to downy and powdery (oidium) mildews, yet is fairly resistant to botrytis bunch rot (grey mold). Xarello can produce monovarietal wines, but is often used in blends with different grape varieties. Classic blending partners are Macabeo, Parellada and Garnacha Blanca. For still wines, fermentation usually takes place in stainless steel tanks or oak barrels, maturation – in stainless steel tanks or oak barrels. In sparkling wine production, the traditional method (second fermentation in a bottle) is used.
