Sauvignon Blanc
Sauvignon Blanc is a white grape variety mainly used for still dry wine production, but it is also used in a blend for sweet wines. It is believed to originally come from the Loire Valley (France). It is an early- to mid-ripening grape variety with small, tight bunches and small berries. It is susceptible to powdery mildew (oidium) and botrytis bunch rot (grey mold). It is also a parent of Cabernet Sauvignon. Sauvignon Blanc typically produces monovarietal wines, but is also used in blends with different grape varieties. A classic blending partner is Semillon. Fermentation usually takes place in stainless steel tanks, sometimes in oak barrels; maturation – in stainless steel tanks, sometimes in oak barrels.
