Pinot Noir / Spätburgunder / Pinot Nero / Blauburgunder
Pinot Noir is a black grape variety used for sparkling, rosé and red wine production. It is believed to originally come from Burgundy (France). It is a grape variety that buds and ripens early, with small, tight bunches and medium-sized, thin-skinned berries. It is sensitive to heat and direct sunlight, susceptible to downy and powdery (oidium) mildews, as well as botrytis bunch rot (grey mold). In still red and rosé wine production, Pinot Noir is typically produced as a monovarietal wine, but it can be blended with Gamay. In sparkling wine production, it can be produced as a monovarietal wine and can be blended with different grape varieties. Classic blending partners are Chardonnay and Pinot Meunier. In red wine production, fermentation usually takes place in stainless steel tanks or oak vats, maturation – in stainless steel tanks or oak barrels. In rosé wine production, fermentation usually takes place in stainless steel tanks, maturation – in stainless steel tanks. In sparkling wine production, the traditional method (second fermentation in a bottle) and the tank method (second fermentation in a tank) are used.
