Parellada
Parellada is a white grape variety mainly used for sparkling – but also for still dry – wine production. It is believed to originally come from Aragon (Spain). It is an early-budding and late-ripening grape variety with big bunches and medium-sized berries. It is susceptible to powdery mildew (oidium). Parellada can produce monovarietal wines but is typically used in blends. Classic blending partners are Macabeo and Xarello. For still wines, fermentation usually takes place in stainless steel tanks, maturation – in stainless steel tanks. In sparkling wine production, the traditional method (second fermentation in a bottle) is used.
