Palomino Fino
Palomino Fino is a white grape variety used mainly for fortified – but also for unfortified – wine production. It is believed to originally come from Andalucia (Spain). It is a mid-budding and mid-ripening grape variety with medium-sized bunches and thin-skinned berries of medium size. It is susceptible to downy mildew, but is heat tolerant. Palomino Fino typically produces monovarietal wines but can be blended with Pedro Ximénez and Muscat of Alexandria. Fermentation usually takes place in stainless steel tanks, maturation – in stainless steel tanks or oak barrels.
