Kefesiya
Kefesiya is a black grape variety used for red wine production. It is believed to originally come from Crimea (Russia). It is a late-ripening grape variety with medium-sized bunches and thick-skinned berries of medium size. It is susceptible to downy and powdery (oidium) mildews. Kefesiya can produce monovarietal wines, but is often used in blends with different grape varieties. Classic blending partners are Bastardo Magarachskiy and Saperavi. Fermentation typically takes place in stainless steel tanks, maturation – in oak barrels.
