Chardonnay
Chardonnay is a white grape variety used for still and sparkling wine production. It is believed to originally come from Burgundy (France). It is a grape variety that buds and ripens early, with compact, relatively small bunches and medium-sized, thin-skinned berries. It is susceptible to downy mildew, powdery mildew (oidium) and botrytis bunch rot (grey mold). Chardonnay typically produces monovarietal wines but is also used in blends with different grape varieties. Classic blending partners are Viognier, Aligote and Pinot Blanc. For still wines, fermentation usually takes place in stainless steel tanks or oak barrels, maturation – in stainless steel tanks or oak barrels. In sparkling wine production, the traditional method (second fermentation in a bottle) is usually used.
